Is it possible to replace the " OFF" word with just a symbol , or would each letter has to be replaced ?

Unlikely that this is supported in the text rendering in Renoise but you can try via the ligature feature of fonts, which allows modern text renderers to merge stuff like -> into →
You can of course replace the individual letter but that will mess up F in other places as well.
