I think one useful concept if you want to capture this kind of style (which, has been done better elsewhere, but is it’s own style nonetheless) is that you have to get away from playing and layering individual instruments. Instead, you take a part that’s already layered and “play” the chopped up version of a layered section. You cold capture this idea by resampling a 2 bar part you write or starting with a sampled track.
