Renoise 3.4.3 lags on my mac mini 2018 with macOs 14.2.1. Sound is ok, but graphically it’s impossible to work because of massive lags. What’s interesting - if the focus is on another window, lags disappear. If i disable Metal based rendering it lags, but in another way (still bad working conditions). Changing the resolution/color scheme/framerate does nothing. It worked perfectly fine before the os update. Other programs work without any lags.
My solution in 2019 when this happened to me was to go back to my old 2012 mac laptop without the update, which I am still typing on now.

My old Intel-based iMac is a 2014 model. The latest version of MacOS I can install on it is MacOS 12 (Monterey). The graphics are fine there with Renoise.
So this will be difficult to test. Is there anything useful in the Renoise logs? Otherwise you seem to have tried everything I would have suggested (colour profile, metal option on/off) and the only other workaround I can see is to downgrade again to the MacOS version that worked for you in this setup. This is a tough one - I know. Sorry.
In general, it’s quite frustrating the way Apple keeps changing these basic GFX things. There surely will be a solution on our side, but it will take a while to diagnose and fix this here.

I’ve experienced issues in the past; on another tracker software, where you could hear the sound before the play bar reached the sound. This was very very common, and easily fixed by increasing the size and sometimes number of buffers for the soundcard.
So increasing / decreacing ‘latency’ or ‘buffers’ in your soundcard properties or in Renoise may change this.

Might be related to Intel graphics only? I know that U-He did a lot of deep diving and resolving Apple graphics framework problems, and they resolved everything. You might ask Urs at kvr simply, pretty sure he will know (he did that research).
