It would be terrific if I could just set a MIDI CC Device to send to several instruments at a time, and even several midi channels if needed.
I discovered it as right now I would need it big time

In one track you probably mean…
I suppose if you would use several different instruments (set to different channels) each of them having their own track, this should work out.
Well most of the time yes. But it can be useful not to be limited to one track (even if it becomes the hell of a dirty workflow…)
