I think the word ‘shuffle’ may cause some confusion as this is quite a specific term used to describe specific grooves, e.g. boogie-woogie piano or billy jean.
For the type of swing you are referring to you need to think like a drummer, and drummers tend to play either on, ahead or behind the beat. For a laid-back down tempo groove your best friend is lazy snares which you can achieve with random but low-value delay column values, say 0 - 30 max at 8 LPB. Hi-hats will need to be a little tighter as they are the principal time-keeper but can also benefit from delay column treatment. To give context there will need to be a couple of elements that are pretty bang - on the beat for example the first kick of each bar.
